After roasting, the shells separate from the cacao beans then the bare beans are ground to produce a cacao liquid paste. This cacao liquid paste is raw, a concentration of cacao solids and cacao butter loaded with antioxidants. It is also rich in minerals such as calcium, copper, sodium, magnesium, iron, zinc, potassium, and phosphorus.
The main flavanols found in cocoa are epicatechin, catechin, and procyanidins. Procyanidins provide the majority of antioxidant activity in cacao. In addition to polyphenols, cacao contains methylxanthine compounds—predominantly theobromine—about 2% to 3% by weight.
